Weiss Family Lemon Bars
Preheat your oven to 350 degrees.
Mix the following ingredients together and press into the bottom of a parchment paper lined 9x13 pan and bake for 15 minutes.
2 cups flour
3/4 cup powdered sugar
1 cup melted butter
While the crust in baking prep the lemon layer.
4 egg whites
3 egg yolks
2 cups sugar
1/2 cup flour
1/2 teaspoon baking powder
zest of 2 lemons
1/3 cup of lemon juice
Beat egg whites and yolks together and then mix in all the remaining ingredients.
When the crust layer is ready, remove the from the oven and immediately pour the lemon layer over the top and return to the oven for 30 minutes.
After 30 minutes remove the lemon bars from the oven and allow to cool before dusting with powdered sugar and cutting into bars. Store in an airtight container in the fridge if you will not be serving them right away.
